Let’s Look: Easy Weeknight Meals

Hi everyone! Happy Wednesday! It’s the second Wednesday of the month which means it’s time for another Let’s Look as I link up with  Shay and Erika.

Each month, we share different parts of our lives with different life hacks too!  Here’s a look at some of the things we have covered so far this year.

This month’s topic is Easy Weeknight Dinners, this is a great topic for working parents who may be running around a lot this time of year with sports and activities for their children. However, this is also a great topic for people who may work evenings and late nights and are looking for easy meals after a long day (that’s me! I fall into that category!) Sometimes, I don’t come home until later at night and the last thing I want to do is cook a big meal that could take a while to prepare. Enter easy weeknight meals. These are some of my favorite easy meals that you can make for yourself or your family.

Grain Bowls– Such an easy and filling meal that can typically be done in one pot. Just grab a grain (I like to go with rice), a protein (beef, chicken, shrimp, sausage), and a vegetable (can be fresh, frozen or steamed)  and cook them all together. You are getting a filling meal, easy cleanup and something that is fairly easy to put together.

Sandwich Bar– A fun spin to a not so exciting meal. If you are a fan of cold cut sandwiches or any sandwiches, consider upping your game with a sandwich bar. Layout all your favorite fixings, from meats, cheeses, spreads etc. and have everyone build their own sandwich. You can buy some fun breads, even toast your bread, get some chips and fruit and make it an experience, rather than just eating a sandwich.

Chef Salad– A fun and healthy dinner option is a chef salad. If you are looking to clear out your fridge or make a hearty meal, consider a chef salad. Add all your favorite salad ingredients and then add in some extras. I like to add protein, like ham or chicken, some hard boiled eggs, cheese, even black beans or avocadoes, depending on what other veggies I have in there. This is a hearty and healthy meal that everyone can tailor to their own liking. 

Soup– This is perfect for the fall and winter months, whether you like them homemade where you can make them earlier in the week and pull them out from the freezer or you enjoy them from the can or even pre-made. This is another hearty meal that’s easy to make. You can add a sandwich or salad for a little something extra too!

Snack dinners-Another easy meal especially if you are looking to clean out the fridge. Grab any fruits, veggies, cold cuts, cheeses, chips or crackers and have a snack dinner. You are using what you have, everyone can find something they enjoy and you have a fun meal. Make it even easier and just use paper plates for easy clean up. I love meals that I can use what I have and not waste.

Friday Favorites #55

Happy Friday everyone!

This week has been a whirlwind. I was on a family trip at the beginning of the week and then jumped right back into work for the end of the week.

Needless to say, it’s been a busy, but good week. I am looking forward to getting back into my routine next week, but it’s been a good change of pace. We are slowly inching towards back-to-school season. One of my brothers made their way back to school today and the others will follow suit in the next few weeks. This summer certainly flew by, but it was quite a memorable summer. 

I hope you are doing something fun this summer Friday as I link up with Erika and Andrea for this week’s edition of Friday Favorites. Here’s been some of my favorite things from the past week.

Barbie movie- I jumped on the bandwagon and finally saw the Barbie movie with my mom before we left for our trip. I had heard a ton of great reviews and after hearing about all the records it broke in the box office, I had to see it for myself. I thoroughly enjoyed the movie. From the fashion, to seeing the accessories and clothes come to life on the big screen and all the nods to Barbie history, this movie had it all. There were a lot of lines that really resonated with me about women, success, how far we have come and how far we still have to go. I agree with other commentators that this movie was more than just about the dolls that thousands of others and I played with growing up. I definitely recommend seeing it!

New Lotion– It’s time for a new scent as we make our way through August. I know some people have signature perfumes and scents they always use, but I personally like to switch it up every few months based on the season and what’s out at Bath and Body Works. I just finished Gingham Gorgeous and now I have moved onto Gingham Vibrant. I tend to get the same scent for both my lotion and body spray. The best way to describe this scent would be a warmer and subtler scent. It’s not as strong and floral as Gingham Gorgeos but still fresh and noticeable. I think it will be a nice transition scent from Summer to Fall.

Simplified Lunch Box– Did I need this next favorite? No, but am I happy that I got it? YES! I have been eyeing up Simplified’s lunch boxes at Target for several weeks and decided to finally upgrade the one I had since junior year of high school. There are three different patterns to choose from, gingham, floral, and lemon. I went with the floral since it was bright and cheery and matched a lot of my purses too. My favorite thing about this lunchbox is how spacious it is. There is a pouch on the outside for a drink (it fits my Yeti thermos), there’s also a zipper on the outside for napkins or silverware and the inside has a lot of room too. It comes with two food storage containers as well. I can easily fit a sandwich, fruit, veggies, a salad, drinks, and many small containers in the lunchbox. This has been a purchase that was well worth it.

Peaches– We are in peach season over here and I have been enjoying peaches whenever I can. I enjoy them at lunch eating them whole, I have enjoyed them for dessert with some vanilla ice cream and I have even enjoyed them as an appetizer grilled with some crackers and cheese. I can’t get enough of peaches, especially when they are sweet and fresh. I love fruit through the entire year, but there’s always something sweet about them when they are in season. Virgin River Trailer– The new trailer for season 5 of Virgin River dropped last week and I couldn’t be more excited. It’s set to return in two installments starting on September 7. This season looks like it will pick up right where it left off from last season. I’m excited to see how a few storylines develops and what questions get answered this season. Let’s Get Cooking: Summer Drinks

Hi everyone! I hope you are having an enjoyable week.

As we make our way through July, my blog series about summer tastes and must haves continues.

Last week, I showed you how to make a super easy pasta salad that an be used for big gatherings or pre-made lunches. To check out my Pizza Pasta Salad check out my last post.

This week we are talking summer drinks.I drink water 99% of the time. I always have it with me whether I’m at my desk, on the go, or at home. In the summer, I do like to change up my drink choices for something a bit more fruity and fun.

Here’s my recipe for Sunrise Juice!

This drink can be served at any meal and just like the pizza pasta salad, you can tailor the portion to your liking. 


Here’s what you need:

-Orange juice

-Sprite or 7 Up

-Pineapple Juice 

-Lime Juice 

-Strawberries to garnish
You can serve this with alcohol but I prefer to drink it just with the juices.

Directions:

  1. In a large glass or cup, mix equal parts or orange juice, sprite or 7 Up (whichever you prefer), pineapple juice and a squirt of lime juice. 
  2. Stir it together and add ice.
  3. Add strawberries to garnish and to your mixture for an extra fruity pop.
    And there you have it, an easy and refreshing summer drink.

You can change out different fruit juices to your liking, but the orange and pineapple go very well together, and the lime juice and soda adds an extra kick.

I like to enjoy this by the pool, when I’m reading or hanging out with friends.

This drink is fairly healthy, sweet and refreshing for the summer.

I Didn’t Work Out for an Entire Summer and Survived

Hello All!

Happy Tuesday!

I hope your week is off to a great start. These past few weeks have been busy but productive. I always feel the first weeks of school are all about getting into a new groove and routine! I think I have established a good routine that will help me this semester!

You may have noticed that I have been quiet about fitness on here for the past few months. I’ll let you in on a little secret…I didn’t work out for the entire summer and I survived. Yes, for the person who tries to workout 5 days a week during the school year, I didn’t hit the gym once and to be honest I was okay with that.

From my pervious posts, you guys know that I had a busy summer between my job and internship, so I wasn’t able to get to the gym as much as I would have wanted to. However, I still took walks at night, swam, and did physical activities outside like playing soccer with my siblings, or running around, so I was still active this summer…just not as much as I would have liked.

I tried to eat healthier in the summer but that isn’t always easy…I like to indulge myself, especially in the summer. Overall, this wasn’t the healthiest summer for me, but a lot of good things happened this summer so it was a good trade off.

I took three months off from the gym, so where does that leave me for this school year? Back in the gym 5 days a week of course! The first day of classes, I was in the gym at 7:00 am. It was so good to get back in the gym and start getting healthier in the gym. Don’t get me wrong, it was hard at first and I had to push myself the first week or so, but it was worth it.

30 minutes of cardio to start my day

This year I plan on changing up my routine in the gym by doing 30 minutes of cardio (either on the bike, treadmill, or elliptical machine), followed by 15 minutes of weight machines, and 15 minutes of  free weights, and then a cool down. I have more time in the morning this semester,  so I’m devoting more time to working out. I plan on using this same routine on the weekends too.

Also, I have learned that it can be hard to eat healthy as a college student when you have limited food options. I’ve been trying to incorporate more fruits and salads in my diet daily and less processed foods. We are only a few weeks in, so I’ll let you know how this plan works out.
